Peru holds a special place in my heart. Aside from being the first South American country I visited, it's home to a remarkable bean from Chulucanas, a native Piura criollo. Crafted in my chocolate factory in England, studded with hazelnuts and raisins, this one moreish square of chocolate.

RIO CARIBE 44

Had the Aztecs eaten milk chocolate, this is how I'd like to imagine they would have created it. Silky smooth with the exquisitely layered notes of the cacao dancing with the milk. As ever, it comes down to beautiful ingredients and perfect balance. Cacao from the Hacienda San Augustine estate near the magical Rio Caribe, cacao butter from Barlovento, sugar cane from Guadeloupe and British milk. Nothing more, nothing less, simply sublime.

EL BLANCO

VENEZUELAN 00

This is white chocolate as it should be, light and milky. The secret is beautiful ingredients and balance. Natural Venezuelan cacao butter, sugar cane from Guadeloupe and British milk, all in perfect harmony. I had to make El Blanco because some of my favourite desserts rely on white chocolate and it it wondrous for decorating cakes, but take a small bite and as it melts you will soon realise that cooking aside, this is one heavenly square of chocolate.

When I crunch into the soft flakes of sea salt buried in this beautiful Rio Caribe milk chocolate, it takes me back to my childhood in Southern Ireland, heading far out to sea to collect pure water, gently evaporating it off and watching the delicate crystals form. Salt is a source of life, with cacao becomes a source of dreams.

On my cacao travels, I came to the terraced mountains of Piura, home to the soft mannered Indians producing some of the finest coffee beans in the world. Here they lie, their flavours perfectly captured, lightly roasted and moments later refined into a remarkable cacao from Chulucanas. This bar encapsulates Peru with all its ancient romance.
